Spanish Rice

This recipe comes from a newspaper clipping out of Port Townsend, WA.  My husband had just graduated from college, and we moved to WA looking for a job. We spend 2 months living with his grandmother in Port Townsend. What a lovely little town. I loved going for walks and beach combing when we stayed there. I found this recipe one day, and a couple months later he found a job in Seattle. We moved. I found this clipping in my stuff one day and made it. Wow it was so good that I have been making it for the next 23 years a couple times a year.
What you will need.
1 pound ground beef
1 onion
1 green pepper chopped
1-3 garlic cloves (I buy the already chopped garlic at the grocer's and use 1 tsp)
1 can 14.5 oz tomatoes
1 1/2 cup of water
1 cup long grain rice
1 tsp chili powder
1/2 tsp thyme
1/4 tsp basil
2 Tablespoons tomato paste
salt and pepper to taste

Saute ground beef with onions , green pepper and garlic in a skillet until meat is no longer pink and juices run clear. Stir in the all the other ingredients except the tomato paste. Cover and simmer for 20 minutes or until the rice is tender.
Stir in the tomato paste turn up the heat a bit and cook for a couple of minutes to heat up the paste.

I like to serve a simple salad along side of it. Its a one pot meal and Oh so yummy.
